6 Roma tomatoes chopped
1 tbsp of minced garlic
1 cup jalapenos, seeded and chopped
1 medium yellow onion chopped
1 red bell pepper chopped
1/2 red onion chopped
1 tbsp extra virgin olive oil
1/4 cup lime juice
1/2 tbsp chili powder
1 tsp salt
1/2 tsp pepper
1/2 cup cilantro
In a bowl, combine all ingredients.
Place in fridge for up to 12 hours
for flavor infusion.
Notes: You can use a blender to chop the ingredients but I like to do it by hand. It ends up looking much prettier.
